Periodic fasts help to stress cells in the body to secrete chemicals. An additional health benefit was documented at the National Institute on Aging, whose chief of neurosciences, Mark Mattson, has shown how intermittent fasts—either eating only every other day, or not eating for twenty-one hours straight each day—increases the production of proteins in the brain that foster the growth of new nerve cells. This apparently enables the brain to repair damage caused by synthetic chemicals and may prevent Alzheimer’s, Parkinson’s, and related disorders.
